Geleia vs. compota vs. doce

In Portuguese, the English concepts of jam, jelly, and preserves are categorized into three distinct words—geleia, compota, and doce—based primarily on the texture of the product and the state of the fruit used during preparation.

Geleia

A2
Geleia refers to what English speakers call jelly; it is translucent, gelatinous, and usually made from fruit juice or strained pulp mixed with sugar and pectin, containing no solid pieces of fruit.

(I spread a thin layer of strawberry jelly on the toast.)

(It is hard to find a seedless grape jelly here.)

(They served the meat with a little bit of pepper jelly.)

Compota

B1
Compota corresponds to fruit preserves or fruit in syrup; it consists of whole fruits or large chunks that are cooked in a sugar syrup, so the fruit pieces remain distinct and visible within the liquid.
Minha avó sempre guardava compota de pêssego na despensa.
(My grandmother always kept peach preserves in the pantry.)
Para a sobremesa, servimos uma compota de figo com queijo.
(For dessert, we served fig preserves with cheese.)

(The fruits in this compote are very sweet because of the syrup.)
Prefiro compota de abacaxi porque gosto de mastigar os pedaços da fruta.
(I prefer pineapple preserves because I like chewing the fruit pieces.)

Doce

A1
While doce generally means sweet, in the context of jars and preserves, it refers to a thick, opaque paste or creamy jam made by cooking fruit pulp and sugar until it reduces significantly, often resembling fruit butter.
O doce de leite mineiro é famoso pela sua textura cremosa.
(The milk jam from Minas Gerais is famous for its creamy texture.)

(Romeo and Juliet is a combination of white cheese with guava paste.)

Summary

To distinguish them easily, remember the texture: geleia is clear, gelatinous, and smooth (jelly); compota contains whole fruits or chunks floating in syrup (preserves); and doce is a thick, opaque, and often creamy paste made from cooked-down pulp (fruit butter or thick jam).
