Dopo vs. poi
While both dopo and poi can be translated as after or then, they are not always interchangeable. Dopo generally refers to a point in time following an event, while poi typically indicates the next action in a sequence.
Dopo
A1Dopo is used to specify a moment in time that comes after another specific event or point in time. It can function as an adverb, a preposition (followed by a noun), or a conjunction (followed by a verb). It primarily answers the question When?.

(We'll see each other later in the square.)

(I go running after work.)

(I will call you after I have finished having dinner.)

(After the storm, the calm returned.)
Poi
A1Poi is an adverb used to indicate a sequence of actions, meaning then or next. It is ideal for listing steps, telling a story, or giving instructions. It can also be used to add a final point to an argument, similar to besides or furthermore. It primarily answers the question What next?.
Prima mi sveglio, poi bevo un caffè.
(First I wake up, then I drink a coffee.)
Prendi la prima strada a destra e poi vai sempre dritto.
(Take the first street on the right and then go straight ahead.)

(We went to the museum and then we ate an ice cream.)

Summary
The main distinction lies in their function. Use dopo when you want to specify a time after a particular event (e.g., dopo la scuola - after school). Use poi when you are listing actions in a sequence (e.g., prima mangio e poi dormo - first I eat and then I sleep). While they can sometimes be used interchangeably in simple sequences, dopo focuses on the temporal relationship, whereas poi focuses on the order of events.
